GETTING YOUR MEAT CUT UP
We use a professional abattoir/butcher close to home. This setup is ideal as it's close by, making the trip low-stress for the animals, and we have been able to nurture a great relationship with the guys who work there.
This butcher offers a couple of set schedules for how they can cut up your beast, depending on whether it's a cow or pig. I'll reproduce them here so people can have a think about it ahead of time.
At first glance the choices look a bit limited, particularly for pigs. However, we've found over the years that there are a number of options not listed in these schedules. These are a good place to start, but we'll be able to advise you individually as to other available cuts should those listed not suit your needs.
